For the last two years I have used this scone pan twice a month. Sunday scones have become a part of our routine. The pan performs consistently well, turning out perfectly shaped scones that are beautifully browned on all sides. After preparing the recipe provided on the included pan liner or using one of countless variations posted on internet recipes sites, pat the dough into a circle one-half inch in thickness and simply cut in half, then quarters and finally eighths.
Although others have skipped preparing the pan, I do use a cooking spray that contains flour, made for baking like Baker's Joy, to ensure the batch doesn't stick - and they never have. Place a wedge into each compartment and then press to fill the space. Bake as directed and eat. They freeze well and lose no quality for at least thirty days - perhaps longer. I don't know precisely how long they can be frozen because ours are usually consumed before thirty days have passed.
I've made a few chanes to the recipe on the included pan liner to suit our taste, although any basic scone recipe will work. I replaced the cranberries with walnuts, added one-half teaspoon ground cardamom, the zest of one orange and one-half cup of mini-chocolate chips. This is now our favorite scone recipe, particularly served with Double Devon Cream (the Somerdale brand is a favorite.) What could be better while reading the Sunday paper?
In the winter I love to make soup for dinner, and cornbread is the perfect accompaniment. Just like the scones, this pan makes it perfectly with a lightly crunchy crust all the way around each piece. Cast iron is considered the perfect material for baking cornbread, and although I wouldn't argue that truism, there are advantages to using this pan instead - specifically --rust and pan weight. This pan certainly has substance, but it doesn't strain your wrist to lift it and rust is simply not an issue as it is with cast iron.
I own many Nordic Ware pans, but this one is a classic that I turn to again and again. Never use metal utensils or harsh scouring pads on the non-stick finish, and the pan should last a lifetime.
