I really like this item. I had been trying to make an omelet, first in my electric frying pan and then in a 8" skillet on the stove top, and I was having absolutely no luck flipping half of the egg over the ingredients and the other half. This pan resolves that problem completely. The eggs cook evenly and you can cook them until they just start to brown. The only caveat I have is don't assume you have to flip the two sides of the pan together fast (you'll just end up throwing the top half past the bottom half), all that is needed is a smooth motion and the halves will center up right over each other (if you do miss slightly you can maneuver the top around slightly as long as you don't wait to long). If you are adding cheese to your omelet don't get antsy and put it on to early! :)
